Clove and Cinnamon Coffee

There is nothing more comforting than a mug of coffee with an amazing aroma of warming spices. I have been using the Sage Appliances Barista Express and decided to experiment with some flavours.


On a cold wintery day, I tried making it with clove and cinnamon, and I loved how it tasted. It instantly banished the gloom and perked me up.

Here is how you make this coffee.

Ingredients:

  • 1 shot brewed espresso. I brewed mine in the Barista Express
  • 1/4 cup milk
  • 1 clove
  • 1/4 teaspoon cinnamon powder
  • 1 teaspoon sugar
  • 1/3 cup hot water
  • Couple of Coffee beans for garnish

Method:

  1. I placed 1 clove in the 1/4 cup of milk and let it infuse for around 15 minutes.
  2. Meanwhile I brewed the espresso in a mug.
  3. I then filled the mug with hot water and added sugar and mixed well.
  4. I then removed the clove from the milk and frothed the milk.
  5. Once it was nice and fluffy, I topped my mug of coffee with it.
  6. I sprinkled on some cinnamon powder and decorated with some coffee beans.

The Captain’s Mince Pie Freakshake

This Christmas why not up your Mince Pie game and leave Santa a Captain’s Mince Pie Freakshake to indulge in whilst he is delivering presents? I am sure he would really appreciate it as rumours suggest that he is  a rum fan and has a weakness for Freakshakes 😉

Alternatively you could impress your guests and make it on Christmas Day for a fun twist whilst enjoying a fabulous feast. This would really up your mince pie and hosting game!

It is so easy to make and fun to assemble.

Makes 4 (2 units per serve)

Ingredients:

200ml Captain Morgan Original Spiced

200ml mince pie syrup

500ml milk

6 scoops vanilla ice cream

Mince pies (to serve)

Method:

1. In a pan mix 600g mincemeat, 200g sugar and 200ml water. Bring to the boil and chill for 30 minutes.

2. In a blender, whizz the milk, ice cream, mince pie syrup and Captain Morgan Original Spiced rum. Pour into a mason jar or tall glass.

3. Decorate glass with syrup and sprinkles. Place mince pies on top of the glass and stab a straw through to drink.

PS: You can make it more fun by adding marshmallows and other naughty treats as calories don’t count during Christmas!

Chocolate and Orange Cake/ Cupcakes 

Ingredients:

  • 125 grams 70% dark chocolate
  • 3 tablespoons milk at room temperature
  • 150 grams butter, at room temperature
  • 150 grams caster sugar
  • 3 eggs at room temperature
  • 200 grams plain flour
  • 1 tbsp good quality cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon bicarbonate of soda
  • 2 Oranges, sliced
  • 1 teaspoon Orange essence

Method:

  1. Preheat the oven to 180º C.
  2. Melt the chocolate in a bowl over a saucepan of gently simmering water and stir in the milk.
  3.  In a separate bowl, beat the butter and caster sugar until the mixture is pale and fluffy. Beat in the eggs, one at a time, then fold in the melted chocolate.
  4. Now sift in the flour, cocoa powder, baking powder and the bicarbonate of soda and mix well.
  5. Divide the mixture between a cake tin or cupcake cases on a tray and place a slice or half a slice of orange in each one.
  6. Place the cake tin or cupcake tray in the oven and bake for 25 minutes.
  7. Pop a skewer in once the baking time is completed and it should come out clean. If not, leave it in a few more minutes.

For this recipe, I used the Divine 70% Dark Chocolate and Cocoa powder.

Vanilla and Mint Freakshake

There is literally nothing better than a Freakshake to cool down with or enjoy at any moment in time and this version is a Vanilla and Mint one, which is DELICIOUS. So easy to make and utterly satisfying.

Ingredients:

  • 3/4 glass filled with Vanilla ice cream
  • 1/4 glass milk
  • Handful Aero bubbles
  • Chunks of Aero mint chocolate
  • Chocolate sauce
  • 1 can whipped cream

Method:

  1. Blend the ice cream, aero mint chocolate chunks and milk together, and pour into a mason jar. I used the Joseph Joseph Non-drip ice cream scoop to scoop out the ice cream from the carton. It is amazing!
  2. Drizzle chocolate sauce over the top and top with whipped cream and sprinkles.
  3. Add as many aero bubbles you wish.
  4. Enjoy straight away

DIY Ice cream Sandwich 

A fun and quick idea to eat ice cream and it takes literally 60 seconds to make!  No cooking or baking required.

This is a great activity to do with the kids over the school holidays, hen do’s or desserts for dinner parties. If you are like me you can just make it for yourself because…why not?

All you need is:

  • Your favourite ice cream
  • Your favourite biscuits
  • A really good ice cream scoop – I recommend the Joseph Joseph Non – drip ice -cream Scoop

I absolutely love this scoop (well anything by Joseph Joseph) – it has such a clever design and it is so cute too. You can get it in either pink (pictured above) or green.

The scoop itself is dimpled, which makes taking ice cream out of the carton so much easier.

 The best thing about the scoop though, is once you have finished, or in between scoops, you can stand it upright so there is no messy drippy ice cream anywhere.

To assemble the ice cream sandwich,  you need 2 scoops per sandwich.

Simply place one biscuit on a flat surface, scoop the ice cream on top and place the other biscuit on top.

With a palette knife, or any blunt knife, smooth the edges around the biscuit.

For an extra special ice cream sandwich you can even add sprinkles.

Once assembled eat quickly 🙂
