Sunshine Paneer

The best thing about Caribbean cuisine is that it is so vibrant and full of flavour… it is like a rainbow of goodness!

Now that I am back home I wanted to create a dish which fused together the Caribbean flavours with indian spices in a medley of fresh vegetables and fruit and so I made “Sunshine Paneer.”

  

Ingredients:

  • A bowl of cubed Paneer
  • One red onion. Dice 2/3 of the onion and slice the remaining 1/3
  • One large tomato pureed and one small tomato cut into chunks
  • A tablespoon crushed garlic
  • A tablespoon ginger
  • One Red chilli
  • One green bell pepper/Capsicum
  • 2 spring onions diced
  • Handful of coriander
  • A bowl of pineapple chunks
  • Salt to taste
  • A teaspoon of black peppercorns
  • A teaspoon of cumin seeds
  • 1 tablespoon jerk seasoning
  • A teaspoon garam masala
  • A teaspoon coriander and cumin powder (dhana jeeru)
  • Half a teaspoon of red chilli powder
  • Oil

  
 Method:

First prepare the paneer cubes by frying them till they turn golden in colour. Place on a Kitchen towel to drain any excess oil.

For a healthy take you can fry them in coconut oil.

    

Now heat oil in a Kadai or a large wok (again you can use coconut oil).

Add in the cumin seeds and black peppercorns and when they start to sizzle turn the heat to medium and add the onions and red chillies.  

Add in the garlic and ginger and cook for approximately 3 minutes until the onions have softened.

  
Now add the capsicum and cook for a further 2 minutes, stir frying the mixture continuously. 

Pour in the tomato puree and now add all the indian spices and cook it down till they have all been absorbed.

 

Now make it colourful and add the pineapple, onion slices and tomato chunks. 

  
Mix in the paneer cubes and add the jerk seasoning. Can you smell that amazingness?

  
Stir fry this mixture for 5 minutes on medium heat and cover the pan for a further 2 minutes so all the flavours intensify.

Add salt to taste and garnish with sprinkles of coriander and spring onions and voila! You have Sunshine Paneer 💛
